GREENSBORO, NC -- Ants and picnics may go together like a hamburger and french fries. But flies in and around your food? That's a problem.
"A lot of times when people are making deliveries, they'll open the door to the restaurant and it will be so they can roll the hand trucks in and out and if the doors open for any length of time flies are going to come in, " explains Chef and GTCC Culinary Instructor Keith Gardiner.
What keeps this from happening? Keith says an Air Curtain is a fan that creates a wall of air that comes straight down. So when the door is open from the outside flying insects can't go through it."
"If you walk in front of a really strong fan but instead of a big round area it's blowing down out of the straight wall. The flying insect just hits the ground."
Here is why it's so important to keep them out: Any flying insect, rodent or anything, if it gets on a piece of food first of all they carry bacteria form where ever they've come from flies are notorious for being in dumpsters another waste areas.
The flies can carry things from the outside but also transfer things from the inside from they might get on raw chicken then fly over to a piece of lettuce, so it could cause cross-contamination internally, but just the bacteria and things that they're bringing in from outside alone is reason to keep them out.
Restaurants can lose up to two points for not controlling flies.
