Greensboro, NC -- Inspectors recently dinged an area restaurant for storing food on the floor of the walk-in cooler. So what's the big deal?
Chef Keith Gardiner, GTCC's Culinary Technology Department explained, "The floors are just dirty so having boxes on the floor, if you pick that box up set it on the table, then you're table's contaminated."
He also said if the box is on the floor, it's hard to clean around. So he said, "If I mop the floor, the box might get wet and then you have a place for more bacteria to harbor, and it creates a lot of problems."
Restaurants can lose up to two points for improper food storage.
