Put Some Of Chef Barry's Thanksgiving Dishes On Your Table

Greensboro, NC -- Chef Barry Moody is helping you set the table for Thanksgiving Day.

Check out these recipes and try them with his seasoning, Spice Delight Essence.

Oven Roasted Turkey Recipe
Serves 4-6
1 bone in turkey breast
1/4 cup vegetable oil
1 tablespoon poultry seasoning
3 tablespoons spice delight all purpose essence
1 tablespoon whole dried thyme
1/2 cup medium diced onion
1 /2 cup medium diced celery
1/2 cup medium diced carrots

1-Rinse turkey and pat dry.
2- In a medium size bowl mix the next 4 ingredients until smooth.
3-Rub spice mixture over entire turkey, and wrap turkey tight in plastic wrap.
4-Let turkey marinate in refrigerator overnight or 24 hrs. for best results.
5-The next day preheat oven to 350 degrees, and spread diced vegetables in bottom of roasting pan.
6-Roast turkey between 1 to 1 ½ hrs. until internal temperature reaches 165 degrees.
7-Remove turkey from pan to make gravy.

Turkey Gravy Recipe
Serves 4-6
2 tablespoons unsalted butter
2 tablespoons spice delight all purpose essence
1 teaspoon poultry seasoning
½ teaspoon whole dried thyme
2 tablespoons all purpose flour
2 cups turkey or chicken stock

1-Add first 4 ingredients listed above into roasting pan with vegetables cooked with turkey.
2-Let simmer for 3 minutes.
3-Stir in flour and cook for another 2 minutes.
4-Add stock and simmer for 10 minutes.
5-Strain gravy into medium pot.
6-Heat gravy at serving time.

Dirty Mash Potatoes Recipe
Serves 4
2 lbs Yukon gold potatoes
1 cup half and half or milk
2 chicken bouillon cubes
2 tablespoons unsalted butter
½ teaspoon black pepper

1-In a large pot add potatoes and cover with cold water.
2-Cook over medium high heat for about 25 minutes until tender.
3-When soft drain and place in a large bowl.
4-In a medium size pot add the rest of the ingredients listed above, and
cook over medium heat until bouillon cubes dissolves.
5-Mash potatoes and add enough milk until smooth.

You can top mash potatoes with bacon, cheese or chives.

Poached Green Beans Recipe
Serves 4-6
2 tablespoons butter
1 thinly sliced red onion
2 lbs fresh green beans (ends trimmed)
1 tablespoon spice delight all purpose essence
1 quart chicken stock
½ cup grape tomatoes sliced in halves

1-Heat butter in large stock pot over medium heat.
2-Add onions and sauté for 3 minutes.
3-Add green beans, spice delight, chicken stock and simmer for 15 minutes.
4-Strain green beans and keep stock for future use.
5-Garnish with tomatoes.

Tip #1- Freeze stock for future use.
Tip #2 (Green Bean Gravy)
Dissolve 2 tablespoons of corn starch with 2 tablespoons water.
Pour corn starch mixture into boiling stock while whisking.
Ladle gravy over green beans.
