Cherry Pit Cafe: Apple Crumb Pie, Shepherd's Pie & Streussel Topping

 Apple Crumb Pie

1 Raw Pie Shell
2 pounds Apple Filling
2 Cups Streussel Topping

1. Pour Apple Pie Filling into pie shell.
2. Bake for 40 minutes at 325 degrees or until crust is brown and apples begin to caramelize.
3. Let cool.
4. Sprinkle Streussel Topping on top of pie evenly.
5. Bake for 8-10 minutes at 400 degrees or until topping begins to brown.


 Apple Pie Filling
2 pounds Granny Smith Apples, peeled and sliced
1 1/2 cups sugar
8 ounces Water
1 TBSP Cinnamon
1 tsp Salt
3/4 Cup Flour

1. Add Apples and water to stock pot on medium heat.
2. In a mixing bowl dry mix sugar, cinnamon, salt and flour.
3. Bring apples to a low boil.
4. Add dry ingredients.
5. Stir thoroughly to incorporate all ingredients.
6. Continue to stir periodically.
7. Cook until apples become soft and can be cut with mixing utensil (approximately 20 minutes).

Streussel Topping

4 ounces Butter, cubed 1/4"
1/2 Cup Brown Sugar
1/4 cup Sugar
¼ 1 tsp Cinnamon
3/4 Cup Flour


1. Combine all ingredients in a mixing bowl.
2. Mix thoroughly to incorporate all ingredients.
3. Use care to ensure that butter cubes remain intact


Pie Dough
1 1/2 Cups {Pastry Flour
1 TBSP Powdered Sugar
1/2 tsp Salt
1/2 Cup shortening (cold), cubed
1/4 Cup ice cold water

1. In a large bowl, mix flour, sugar and salt.
2. Add shortening and coat with dry ingredients.
3. Using your hands (or pastry blender), mix until the mixture resembles a course, damp meal.
4. Add half of the water to mixture.
5. Gently mix until water is absorbed.
6. Slowly add more water while mixing.
7. Only add enough water for dough to become damp and barely holds together.
8. Do not over mix.
9. Do not knead.
10. Form dough into a ball and refrigerate for 1-24 hours.
11. On a floured surface, use a rolling pin to flatten the dough to a depth of 1/8".
12. Transfer dough into pie tin.
13. Crimp edges using fingertips or crimping tool.


Shepherd's Pie
1 pound Ground Beef
1 tsp Black Pepper
1 tsp Salt
5 ounces brown Gravy, prepared
2 ounces olive oil
1 Cup Yellow Onions, chopped
1 Cup Red Onions, Chopped
1 Cup potatoes, cooked and chopped
1/2 Cup Celery, diced 1/4"
1/4 Cup mild Cherry Peppers, diced 1/4 "
1 1/2 Pounds prepared Mashed Potatoes
2 Cups Cheddar Cheese, shredded

1. Brown ground beef in sauté pan (season with ½ tsp salt & ½ tsp pepper).
2. Drain ground beef.
3. In a separate pan, sauté vegetables in olive oil until onions and celery are translucent.
4. Season with remaining salt & pepper.
5. Pour cooked ground beef into serving dish.
6. Pour Brown Gravy over ground beef.
7. Pour cooked vegetables over mixture.
8. Cover mixture with ¾ Cup cheddar cheese.
9. Layer mashed potatoes on top of cheddar cheese.
10. Sprinkle remaining cheddar on top of mashed potatoes.
11. Garnish with Cherry peppers.
12. Serve warm.
