Gourmet Red Velvet Cupcakes By Yo Daddy's Dessert Bar

Jeff Blackley stopped by the News 2 Kitchen to debut some of Yo Daddy's Dessert Bar's specialties.

Red Velvet Cupcake Recipe

Sugar 1-3/4 cups

Vegetable oil 1 cup

Cake flour 3 cups

Baking soda 1.5 teaspoons

Salt 1/2 teaspoon

Buttermilk 2 cups

White vinegar 1 tablespoon

Vanilla extract 1 tablespoon

Eggs 5 each

Dutch process cocoa 2 tablespoons

Red food coloring 2 tablespoons

Directions

Preheat oven to 325 degrees and prepare cupcake pans with papers
In a small mixing bowl combine flour, baking soda and salt in another small mixing bowl combine buttermilk, vanilla and vinegar
In a small container add cocoa powder (in a well shape to hold food coloring) and then food coloring
Cream oil and sugar in mixer with paddle attachment until white and light in texture. Add eggs one at a time, allowing it to be fully incorporated before adding the next one
Alternating, add flour mix, then buttermilk mixture in two additions. Next add cocoa and food coloring mixture all at once, being careful to slow mixer speed to avoid splashing
With a rubber spatula, scrape down the sides of the bowl folding in any unmixed flour until completely uniform
Scoop cupcakes into prepared pans with a #20 scoop and bake 14 minutes or until tester comes out clean

Butter 8 oz weight

Cream cheese 12 oz weight

Powdered sugar 12 oz

1 ½ teaspoon vanilla

1 ½ teaspoon lemon
