Time To Spice It Up With Some Cuban Cuisine

Greensboro, NC -- We've got two Cuban dishes you're going to want to put on tonight's menu to cook at home.

Two chefs with Miami's Cafe made a stop by the Good Morning Show on Friday but they weren't alone. Sophia Grice who's with No Barriers No Walls also made an appearance.

Let's step into the kitchen now and show you how to prepare Arroz con Pollo and Ropa Vieja.

Arroz con Pollo

3lbs- leg quarters and breast quarters
1lb rice oregano
1/4 tbsp white pepper
1/4 cup red cooking wine
2/3 cups olive oil
1 red or green pepper
2 garlic cloves
12 small tomato
beer (optional)

Cut the chicken in eighths and fry it with hot oil in the same pan fry the "sofrito" (diced onions, garlic, pepper, and tomato)
Add the chicken broth and let it boil for a few minutes until the chicken begins to tenderize
Add the wine, salt, saffron, cumin, and black pepper
Let it boil than add the rice. Cook for about 30 minutes in low heat or in the oven in 400F for about the same time or until the rice is cooked.

Ropa Vieja

flank steak or skirt steak
3 tbsp-vinegar
1/4 cooking wine
4 onion
1 cup tomato puree
black pepper
olive oil
2 green and red peppers
Spaniard sausage
4 garlic cloves
pinch of salt
1 bay leaf
1 cup- beef broth

Make a broth using your piece of flank steak/ beef skirt, add two onion (diced), 2 cloves of garlic, diced green/red pepper, 1 bay leaf, and black pepper. Cook until the meat is tender and begins to fall apart.
Make "sofrito" with oil, 2 mashed garlic cloves, 2 diced onions, salt and then sauté all together than add the tomato puree. Let cook in medium heat until it's partially cooked appx 10 minutes than add the beef (already pulled into strips) and the cup of beef broth. Seal well with a top to make sure the beef absorbs the broth and "sofrito" for appx 20 minutes than add the peppers (cut into strips) and add salt (to your preference), vinegar and cooking wine. Then let all boil for a few more minutes.

Black Beans and Rice

2 cups- par boiled rice
1 cup- - black beans
1 onion bacon
2 red pepper
4 garlic cloves
1 bay leaves
1/4 cup vegetable oil
2 cups bean broth

Wash the beans and put in the pot (preferably a pressure cooker) and live in water with diced green peppers until the beans puff up.
Cook in the same water until they are tender and cooked. appx 20-25 minutes (in pressure cooker)
(In separate pan) Sofrito- Heat oil and sauté diced onions, garlic, and the other pepper. Add 1 cup of beans (smash the beans together so it can help the beans thicken up) than add salt, black pepper, oregano, cumin, 1 bay leaf and the sugar. (boil for appx 5 min)
Add sofrito to your beans along with vinegar and cooking wine in low heat for appx 10-15 min.
