Eric learns from an authentic italian chef the secrets to two incredible italian dishes.  Come hungry!

Here are the recipes for his dishes.

Grouper Mediterranean

8oz Grouper Fillet
5 calamata olives
1/2 oz capers
4oz chicken broth
2oz marinara
2oz caramelized onions
1oz butter
1oz white wine
Touch of salt and pepper
Angel hair pasta or spinach.

Put all above ingredients in sauté pan on medium heat, let it cook,
season with salt and pepper, serve on top of angel hair pasta or
sautéed spinach.

Petto do Pollo Luigi

3 slices of chicken breast
1 oz chopped shallots
Pinch of fresh sage
3 oz mushrooms
4 pcs of artichoke hearts
1 oz butter
2 oz white wine
4 oz chicken broth
Touch of salt and pepper
Angel Hair pasta

Pan sear lightly flour chicken breast. Sautee shallots in olive oil
with sage and mushrooms. Put all together and add chicken broth and
butter, white vine, artichoke hearts, salt and pepper, reduce sauce
and serve over angel hair pasta.
