Savannah Style Red Rice:
Makes 4 servings

1 teaspoon butter
1 teaspoon vegetable oil
¼ cup chopped green bell pepper
¼ cup chopped onion
1 cup frozen corn
1 tablespoon Spice Delight All-Purpose Essence
1 teaspoon dried basil leaves
2 tablespoons tomato paste
1 quart chicken stock
1 cup rice


1. Melt butter in oil in a medium sized saucepan over medium high heat.

2. Add bell pepper, onion, corn, Spice Delight Essence All-Purpose Essence and basil. Sauté 5 minutes, stirring occasionally until vegetables are tender.

3. Add tomato paste and a little chicken stock, stirring until paste is well blended.

4. Stir in remaining chicken stock and rice. Heat to boiling. Reduce heat and simmer for 30 to 35 minutes covered until rice is tender, stirring often to prevent rice from sticking.
