Cherry Pit's Stuffed French Toast And Mini Pastry Pies

French toast Batter

6 Fresh Eggs
8 oz. Half & Half
2 TBSP Sugar
¼ tsp Salt
1 tsp Vanilla
1 tsp Cinnamon

1. Combine all ingredients in a mixing bowl.
2. Mix thoroughly until all ingredients are incorporated.

Stuffed French toast

2 pieces Texas Toast Bread
2 oz. Cherry or Apple Filling
Powdered Sugar

1. Spoon filling onto center of one piece of bread.
2. Cover with second piece of bread.
3. Press together.
4. Submerge in French Toast batter for 5 seconds.
5. Grill in sauté pan on medium heat for 1-2 minutes or until golden brown on both sides.
6. Cut diagonally and serve.

Mini Pastry Pies

1 Sheet Puff Pastry
12 oz. Pie Filling
1 oz. Whole whisked eggs

1. Using a large cookie cutter or ring, cut out large circles from pastry sheet.
2. Spoon 2 oz. of pie filling in center of circle.
3. Cut extra dough with small cookie cutter or use a knife to make other designs.
4. Using a pastry brush, brush tops of pies with eggs.
5. Bake at 400 degrees for 14-17 minutes or until golden brown.

Apple Pie Filling
2 pounds Granny Smith Apples, peeled and sliced
1 1/2 cups sugar
8 ounces Water
1 TBSP Cinnamon
1 tsp Salt
3/4 Cup Flour

1. Add Apples and water to stock pot on medium heat.
2. In a mixing bowl dry mix sugar, cinnamon, salt and flour.
3. Bring apples to a low boil.
4. Add dry ingredients.
5. Stir thoroughly to incorporate all ingredients.
6. Continue to stir periodically.
7. Cook until apples become soft and can be cut with mixing utensil (approximately 20 minutes).
