Pumpkin Tiramisu in chocolate cups

Serving Size : 22

1 1/2 cups cream
3/4 cup sugar
8 ounces mascarpone cheese
1 15 oz can pure pumpkin
3/4 teaspoon pumpkin pie spice
12 ladyfingers -- cut in quarters
1/4 cup water
1/4 cup sugar
1/4 cup rum

Beat whipping cream and sugar until peaks form.
Add mascarpone cheese, pumpkin, and pumpkin pie spice; beat just until filling is smooth.

in microwave, heat water and sugar to melt
add rum to this syrup

cut lady fingers into 4 pieces and use two pieces for each.

dip ladyfingers in rum syrup, sugared side down, for 3-5 seconds

place in chocolate cup
top with pumpkin mixture

Sprinkle with cocoa


Turkey Breast stuffed with cranberries, rosemary and prosciutto

Serving Size : 8

1 6lb turkey breast
salt and freshly ground pepper
3 sprigs rosemary
6 cloves garlic
1 cup dried cranberries
1/2 cup sherry
2 tablespoons olive oil
8 slices prosciutto
salt and pepper
kitchen twine
aluminum foil
parchment paper

Preheat oven to 350 degrees.

mince rosemary and garlic
place cranberries and sherry in microwave proof bowl, microwave 2 minutes

Place the turkey breast skin side down on cutting board
Holding the blade of the knife parallel to the board, about halfway down, slice into the thickest portion of the breast.
Cut along the length of the breast, but not all the way through.
Unfold so the turkey opens like a book.

Season with salt and pepper.

Spread garlic and rosemary evenly over turkey, leaving a 1-inch border.
top wiht prosciutto

drizzle with cranberries

Roll into a log, completely enclosing the stuffing
tie with kitchen twine

Season all over with salt and pepper

line baking pan with aluminum foil and top with parchment paper

Roast on a baking sheet at 350 for 2 hours
until an instant-read thermometer inserted in the middle registers 165 degrees

Let rest for 10 minutes

Remove twine, then slice crosswise about 3/4 inch thick.
