Sweet Potato Ginger Soup
-8 sweet potatoes baked -1.5 cups White sugar
-1.5 cups brown sugar -1/2 cup melted butter
-1/2 gallon whole milk -2 tbls ginger
-1 tsp salt -1 tsp black pepper
-1/2 cup sour cream

Bake 8 sweet potatoes in oven for 1 hour @ 350 degrees. Peel skin off sweet potatoes. Pour 1 quart of milk into a sauce pot. When milk is hot add remaining ingredients. Whisk very well. Place soup on medium heat for 25 minutes while stirring. Add more milk to achieve the consistency you desire.

Sweet Potato Souffle
-8 sweet potatoes -1 cup shredded coconut
-1/2 cup whole milk -1/4 cup crushed pecans
-1.5 cups melted butter -2 cups brown sugar
-2 cups white sugar -1 tsp Butternut flavoring
-1 cup self rising flour -1 tsp vanilla flavoring
-2 tsp cinnamon -1 cup coconut
-3 cups marshmellows

Bake 8 sweet potatoes in oven for 1 hour @ 350 degrees. Peel skin off sweet potatoes. Place sweet potatoes in a bowl. Add ½ cup coconut, ½ cup whole milk, ¼ cup crushed pecans, ¼ cup butter, 1.5 cups brown sugar, 1.5 cups white sugar, ½ tsp butternut flavor. Mix thoroughly. Place in a greased 10'' x 14" pan. Next mix 1 cup flour, ½ cup brown sugar, ¼ cup white sugar, 1 tsp vanilla flavor ,1 cup melted butter, and 2 tsp of cinnamon. This will be the crust for the soufflé. Sprinkle lightly over soufflé. Sprinkle 2/3 cup of coconut over soufflé. Bake in oven @ 350 degrees for 25 minutes. After removing from oven spread 3 cups of marsh mellows over soufflé. Ready to serve
