Celebrating Farmers Market Week With "Moose Cafe"

It's National Farmers Market Week and we are celebrating by showing you how easy it is to incorporate local produce into your life. Margaret Walker owns "Moose Café" with her family and knows how important it is to eat locally. Their restaurant is located inside the Piedmont Triad Farmers Market and they only use produce that is grown right here in our state. Not only does eating locally help our state's economy, but it tastes so much better. She stopped by The Good Morning Show to make two recipes that perfectly use ingredients you can find at the market.

Spinach Salad with Ripe Tomato, Bacon, Boiled Egg, Strawberry, topped w/ Warm Bacon Dressing

Warm Bacon Dressing
1 Pint Red Wine Vinegar
1 Cup Balsamic Vinegar
8 Strips of Cooked Bacon (Chopped)
1 Diced Red Onion
Handful Chopped Fresh Parsley
½ Cup Sugar
Salt & Pepper to taste

Mix all ingredients, whisk, & bring to a boil.  Reduce heat and let simmer for 10 to 15 minutes.  Take off from heat.  Serve slightly above room temperature.

*Put Fresh Spinach, Cut Ripe Tomatoes, Chopped Bacon, Chopped Boiled Egg, Strawberries, & Feta Cheese in a Bowl.  Drizzle warm Bacon Dressing over.

Fresh Watermelon, Tomato, Cucumber, & Feta Cheese Salad

1 Seedless Watermelon Cut & Diced
2 Diced Red Onion
1 Cup Crumpled Feta Cheese
2 Jumbo Cucumber Cut
1 Cup of White Vinegar
1 Cup of Balsamic Vinegar
½ Cup Sugar

Salt & Pepper to taste
Mix all ingredients together and serve

It is a perfect accompaniment to any meal to make a refreshing side.  Take advantage of the great watermelon the Farmers provide in this area during the summer months.
