Chef Timothy Grandinetti of "Spring House" Show Us His Signature Dishes

We are very lucky to have Chef Timothy Grandinetti in our News 2 kitchen. You might recognize Chef Tim from his time on The Food Network's series "Chopped" His restaurant, Spring House in Winston-Salem, recently celebrated their one-year anniversary and he stopped by to show us his signature recipes. If you would like to try them out, here they are.

Portobello & Leek Quesadilla With Pineapple, Sweet Red Onion, & Jalapeno Salsa

1 1/2 cups fresh pineapple

6 Tablespoons thinly sliced green onions

6 Tablespoons finely chopped red onion

3 cloves garlic, minced

2 each jalapeño, minced

3 Tablespoons fresh lime juice

1 1/2 Tablespoons rice wine vinegar

4 Tablespoons olive oil

6 Tablespoons finely chopped fresh cilantro


Spring House Blue Ribbon Shrimp, Tasso Gravy, & Grits With Tasso Gravy

Saute tasso ham

Add peppers & onions

Add 1 part cajun seasoning & .5 part dried oregano

Deglaze with 2 cups sherry

Reduce by ½

Add 2 cups tomato paste - cook for 5 minutes

Add 2 gallons chicken stock

Add 1 cup heavy cream

Thicken with roux


Spring House Grits

smoke 3-4 large tomatoes.

3 cups stone ground grits

1 pint heavy cream

0.5 gallon chicken stock

2 cups shredded cheddar

1 cup pimento cheese
