The Executive Chef From Foothills Brewing Shares Recipe For Ostrich Pub Melt

Ostrich Pub Melt

2 slices sourdough
2 slices bacon
2 button mushrooms
¼ sliced red onion
1 slice cheddar cheese
1 slice provolone
2 slices tomato
2 leaves romaine lettuce
½ oz Foothills house spicy mustard
6 oz. ostrich patty (recipe below)

Butter one side of bread and place on medium hot pan
Place one slice of cheese on each piece of bread
Cook bacon in pan, save leftover oil
Sauté mushroom and onion in leftover oil from bacon
On toast with sliced cheddar, add spicy mustard, lettuce, and sliced tomato
On toast with sliced provolone, add sautéed mushrooms, onions, and bacon
Now add grilled ostrich patty

Spicy ostrich patty mix:
1 lb. ground ostrich meat
½ jalapeno, diced
¼ diced red onion
¼ oz. Texas Pete hot sauce

Mix all ingredients together until well incorporated
Grill patty to medium rare
