Dominiquica Huff's Recipe for "Cheesy Chicken Mac"
Ingredients to use are as follows:
- 1 box of Kraft Macaroni and Cheese Deluxe 4 Cheese
-Fiesta Blend Cheese Finely Blended (2 cups)
- 2 Chicken Breasts
- Olive Oil- 3 Caps
- Meat Tenderizer
- Beer Can Chicken Seasoning
- Black Pepper
- Garlic Powder
- 3/4 Milk
- 2 Teaspoons of Butter/Margarine
- 1 Egg
- Spray Butter
- Paprika & Parsley (For ending decorations)
- Medium Size Frying Pan
- 8"x11" Casserole Dish
Set oven to 350 degrees. In a medium size sauce pan, bring 8 cups and 1 cap of olive oil to boil. Once the water begins to boil, add the box of Kraft Macaroni and Cheese Deluxe 4 Cheese to boiling water. Boil 8-10 minutes or to desired tenderness. Stir the noodles periodically to keep them from sticking to each other.
While waiting for the noodles to become tender, rinse off the 2 chicken breasts and mince them into small pieces. Place the chicken in frying pan with 2 cap fulls of olive oil and begin sautéing them while adding the meat tenderizer, beer can chicken seasoning, garlic powder and pepper. Sauté chicken to desired tenderness.
After the macaroni noodles are done, drain the water off of the noodles and set aside. ( DO NOT RINSE THE NOODLES).
Once the minced chicken is cooked to your desired tenderness, combine the minced chicken with the macaroni noodles, squeeze the cheese sauce over the hot macaroni noodles. Add 3/4 milk, 2 teaspoons margarine, 1 cup of fiesta cheese, and 1 egg together. Mix well or until egg is dissolved.
After lightly spraying the spray butter into the casserole dish, pour the mixture of noodles and other ingredients into the dish. Sprinkle 1 cup of fiesta cheese on top and bake in the oven for 25-30 minutes.
After dish is done, let it sit for 5-8 minutes, lightly sprinkle paprika and parsley flakes on top for the finishes look (which is optional). Makes 9 servings.
