Luscious Lemon Cake Squares Recipe
1 box lemon cake mix
3 egg whites
1/3 cup applesauce
1 Tbsp. flour
1-1/4 cups water
1/3 cup lemon juice
1 ½ cup powdered sugar
Preheat oven to 350 degrees F. Spray 13 x 9 x 2 pan with nonstick flour based cooking spray. Prepare cake according to package directions except, add 1 tablespoon of flour to the dry mix and blend well. Substitute an equal amount of applesauce for the vegetable oil and substitute an equal number of egg whites for whole eggs.
Pour into prepared pans and bake according to package directions. Cook in pan on middle rack. Remove from pans when completely cool. Combine glaze ingredients and pour over cake. Or if you prefer, frost cake with fat-free non-dairy whipped topping or sprinkle with powdered sugar just before serving. 16 servings.
Nutrition information: 189 Calories, 3.4 grams fat, 1.8 g protein, 240 mg sodium, 0 mg cholesterol. Overall, you'll save 750 calories and 86 grams of fat using applesauce instead of oil in this recipe.
