Too much garden zucchini? Lauren's zucchini bread recipe

Triad -- It's a problem some people would love to have. If you have a garden, sometimes you have more produce than you know what to do with. It's nice to share with the neighbors but after a while, they might be zucchini-ed out too. Here are some options.

First, think about donating your extras to someone who might not have any fresh produce. There's a program known as "Plant A Row For the Hungry". All you have to do is take your produce to the Guilford County Agriculture Center. They will make sure it gets to those who need it. Contact the Extension Office for more details at 336-375-5876.

After you've done that and you still have zucchini coming out of your ears, here's a delicious recipe from Lauren Melvin.

Lauren's Zucchini Bread Recipe

3 eggs
1 cup oil
1.5 cups sugar
2 cups grated zucchini
3 cups flour (I use 2 cups whole wheat)
2 tsp baking soda
.25 tsp baking powder
1 tsp salt
3 tsp cinnamon
.5 cup walnuts (optional)
1 cup crushed pineapple
2 tsp vanilla
1 cup chocolate chips
sprinkle brown sugar on top

bake 1 hr @ 350
makes 2 loaves
