1 tbsp my essentials Vegetable Oil
1 lb Nature's Pace Boneless Skinless Chicken Breast Halves
1 lb Andouille Sausage
1 med Red Onion
1 med Green Bell Pepper
1 Celery Rib
1 med Tomato
2 tbsp Taste of Inspirations Cajun Seasoning
2 Food Lion Bay Leaves
1 cp my essentials Long Grain Rice
1 can my essentials Chicken Broth


1. Heat oil in large heavy skillet on medium-high heat. Add chicken and sausage; cook and stir 5 minutes. Remove from skillet.
2. Pour off excess oil. Add onion, bell pepper and celery; cook and stir on medium heat until onion is softened.
3. Stir in tomato, Cajun seasoning and bay leaves. Return chicken and sausage to pan. Add rice and chicken broth; bring to boil.
4. Reduce heat to low; cover and cook 25 minutes or until rice is tender, stirring occasionally. Remove bay leaves before serving.
