2WTK Looks at Hand Washing In this Restaurant Report Card Lesson

GREENSBORO, NC -- A restaurant recently lost points because a worker used dish soap to wash their hands. What? We do it all the time at home so what's the big deal in a restaurant? Chef and G-T-C-C culinary department instructor Keith Gardiner explains why that's a violation.

Keith says, "You have to wash, rinse, and sanitize. The sanitizer is a separate step. So if they're using soap from the pot sink, it's not typically going to have any sanitizer in it."

"I've seen people just going to the dirty pot water, stick their hands in, rub them and then go do something else," Keith says as he grimaces.

He says the rules about using sanitized hand washing soap is all about keeping food from getting contaminated and people from getting sick.

Restaurants can lose up to four points for this violation.
