Greensboro, NC -- Health inspectors dinged an area restaurant for not having any paper towels at its handwash sink in the kitchen. Chef and G-T-C-C instructor Keith Gardiner tells us the do's and don'ts we can all learn from in tonight's Restaurant Report Card lesson.
"I come over here to wash my hands, and I turn the water on and my hands are contaminated with whatever. I clean my hands, wash them, and then I go to reach for a towel. If there is none, I turn the water off, and I re-contaminate my hands by touching the tap handles."
Keith says, "I probably wipe my hands them on my apron or use my side towel to dry my hands off. So now whatever was on my hands when I went to wash them has now contaminated my towel or apron."
Keith says the proper way is after you wash your hands for 20 seconds is to take the paper towel, dry your hands and use that towel to shut that off off the water so you're not re-contaminating your my hands.
