WFMY -- No one wants to show up to a holiday party empty-handed, but you don't want to spend hours in the kitchen either!
Meredith Williams, with Peppermoon Catering, has some easy and quick ideas that are sure to please the crowd.
(Don't let the name fool you!)
1 medium yellow onion, thinly sliced
1 bunch green onions, sliced
½ red onion, chopped
1 tsp sugar
3/4 tsp salt
½ tsp nutmeg
½ tsp pepper
3 oz cream cheese, softened
¾ cup Swiss, shredded
¾ cup Monterey Jack, shredded
3 eggs, slightly beaten
2/3 qt heavy cream
48 tart shells
Over medium heat, in sauté pan, cook yellow onion, green onion, red onion until tender. Before browning add sugar, salt, pepper and nutmeg. Cook approximately 5 minutes. Stir occasionally.
Stir in cream cheese until melted.
Transfer to bowl.
Stir in Swiss and jack cheeses until well combined.
In a separate bowl combine eggs and whipping cream.
Gradually stir in onion mixture until well combined.
Fill tart shells ¾ full.
Bake on 350 degrees approximately 25 minutes until golden brown.
Immediately prior to serving, top with tomato relish.
Display and serve room temperature.

Yields approximately 48 tarts, or 24 servings
