Great Harvest Game day Casserole

4 cups Great Harvest Cheese Bread, cubed (best with Fiesta or Cheddar Garlic)
1 pound of meat (optional) sausage or chicken (diced or shredded) or ham (diced)
1 onion chopped (optional)
6 large eggs
3 T sour cream
1 cup salsa

24 oz shredded cheese (cheddar is best, other blends to preference)


? Arrange cubed bread in greased 9 x 13 pan
? Beat eggs, add sour cream, beat together
? Pour egg mixture over cubed bread
? Bake @ 400° until eggs set (about 5 minutes)
? Brown meat, onion in skillet (while egg mixture is in oven)
? Remove eggs from oven, spoon salsa over top
? Layer meat mixture over salsa
? Sprinkle cheese over top layer
? Broil until cheese melts*

? Before serving, let set for 10 minutes

* Can also refrigerate overnight, then bake @ 350° for 35 Minutes.

Bread Pudding Oatmeal

(per serving)
1/3 cup Rolled Oats
1/3 cup, + 2 T Milk
1/3 cup Water
pinch of Salt
1/2 Banana (soft)
1/2 slice Great Harvest Cranberry Orange bread, cubed
Optional Mix-ins & Toppings:
1 T Flax Seed (ground) or Chia Seeds
Sunflower Seeds
Shredded Coconut
1T Peanut Butter or other Nut Butter or Honey

? Combine oats, milk, salt and water in pot
? Heat at medium, stir to blend
? Slice banana into thin pieces, add to pot
? When oats begin to bubble, appx 4 minutes, begin stirring
? Continue stirring vigorously about 2 minutes until creamy
? Reduce heat, add stir-in ingredients, as desired
? Stir in cubed bread slices
? Add in 2 T of milk, stir until absorbed
? Serve in individual bowls
? Add toppings, to taste
