Maxie B's Recipes: Pound & Lumberjack Cake

"Lumberjack Cake"

1 cup pitted dates
1 tsp baking soda
1 ¼ c. all purpose flour
¼ tsp baking powder
¼ tsp salt
½ cup butter, softened
1 ¼ c. sugar
1 egg
1 tsp. vanilla
1 pear or apple, peeled and chopped
½ cup flaked coconut
Powdered sugar

Preheat oven to 350. Grease a 9" pan, and line bottom with parchment paper.

In a small saucepan, bring dates and 1 cup water to a boil. Remove from heat. Stir in baking soda (mixture will foam). Set aside. Cool to room temperature.

In a small bowl, stir together flour, baking powder, and salt. Set aside.

In a large bowl, beat butter, eggs, sugar, and vanilla with an electric mixer on medium speed until combined. Add flour mixture gradually, beating just until combined. Fold in chopped pear (or apple) and coconut.

Spread mixture evenly into prepared pan. Bake 45-50 minutes until a wooden toothpick inserted in center comes out clean. If needed, rotate pan and bake 5 more minutes. Cool on wire rack, then turn out and remove parchment paper. Flip over again and sprinkle with powdered sugar. Using a slotted spoon, garnish top of cake with the glazed pears, recipe below!

Glazed Pears:
¼ cup water
½ cup sugar
1 pear, sliced into wedges, skin still on

In a small saucepan, combine water and sugar and bring to a boil over medium high heat, stirring frequently. Add pear wedges from one pear. Cook and gently stir for 20 minutes until tender over low heat until tender. Remove and cool to room temperature.


"My Favorite Pound Cake"

8oz cream cheese
2 sticks butter
3 cups sugar
6 eggs
3 cups cake flour
1 t. baking powder
1/2 t. salt
1 t. vanilla
1 Tbl. lemon extract

Beat cream cheese and sugar together until smooth,
add butter and continue beating. Add eggs, vanilla
and lemon; mix well after the addition. Add cake
flour and remaining ingredients, mix well. Divide
batter into 3 prepared cakes pans or into 1 pound
cake pan that has been sprayed with Baker's Joy.
Bake at 300 for 1 hour and 15 minutes.
