Chilled Avocado Soup With Lime And Pico de Gallo
Serving Size : 2

3 avocado
2 cups vegetable stock
1/2 cup yogurt, plain, low-fat
1/4 teaspoon cayenne pepper
1/2 teaspoon celery salt
1 tablespoon lime juice
1/4 teaspoon salt
1/8 teaspoon ground pepper
pico de gallo topping
1/4 cup red onion -- minced
1/2 cup tomato -- seeded, peeled and diced
1/2 jalapeno -- seeded and minced
1/2 each lime -- segments and juice
1/2 cup cilantro -- chopped coarse
1/4 teaspoon salt

puree soup ingredients in blender

taste to adjust seasoning

pico de gallo topping
mix minced onion, diced tomato, jalapeno, lime, cilantro
toss with salt
spoon over soup to garnish

Yield:
"1 quart"

 

Chilled Cucumber Soup

Serving Size : 2

1 1/2 Cucumbers
1/4 green bell pepper
1/4 jalapeno -- seeded and chopped
1 clove garlic -- pressed
1 tablespoon Shallot
2 tablespoons Cilantro
1 tablespoon Mint
2 teaspoons oregano -- fresh
1 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
1/4 teaspoon ground pepper
1/2 teaspoon white wine vinegar
1/2 tablespoon olive oil
1 Scallions -- sliced
1 cup yogurt
1 cup sour cream
Garnishes
2 tablespoons chives -- minced
1/4 red bell pepper -- for garnish

Working in batches, puree the ingredients in blender until very smooth.

start with the cucumbers, peel, cut lengthwise and seed, then cut in 3 inch chunks and process in batches
pour into large bowl
make sure the cucumber puree is really smooth!

seed bell pepper, jalapeno, blend until smooth, pour in bowl
do not use a lot of jalapeno in the blender, it becomes very intense

add garlic and shallots, process, scrape sides, do not remove yet

then add herbs, salt and spices, process, scrape sides, do not remove yet
add white wine vinegar and olive oil, process again and then pour in bowl
add yogurt, sour cream to bowl

place in the refrigerator until well chilled, about 2 hours

Taste and adjust the seasoning if necessary, it may need salt and pepper

Serve the soup, with each bowl garnished with minced chives and diced red bell pepper.

Yield:
"1 quart"
